PESTO PASTA WITH VEGGIES

Cook Time: 40 mins
Serves: 4 people

What You'll Need:

  • 1 box of pasta (I like Banza gluten free pasta)

  • 1 red pepper

  • 1 zucchini

  • 1 yellow squash

  • 1 yellow onion

  • 1 bunch of asparagus

For the Pesto:

  • 1/2 cup basil

  • 1/3 cup olive oil

  • 1/4 cup cashews

  • 1/4 cup pecans

  • 3 garlic cloves

  • 1/2 tsp salt and pepper

How It's Done:

Cook the pasta. Chop all the veggies and warm a skillet on medium heat. Add some olive oil to the skillet, all the veggies, salt and pepper. Sauté the veggies for about 10-15 mins, until they are cooked through. 

​

While the veggies sauté, add all the pesto ingredients to a food processor and blend. 

​

Mix the pasta, pesto, and sautéed veggies in a bowl and enjoy!
