LEMONY SPRING PASTA WITH VEGGIES
Cook Time: 30 mins
Serves: 4 people
What You'll Need:
1 box of pasta (I used gluten free pasta)
1 cup arugula
1 bunch of kale
1 red onion
1 head of broccoli
1 summer squash
1 yellow pepper
4 cloves of garlic
1 tsp dried thyme
1/4 tsp salt
1/2 tsp pepper
juice of two lemons
1 tbsp olive oil

How it's Done:
Cook your pasta. While the pasta is cooking, heat a dutch oven or large skillet on medium heat and the olive oil. Chop the kale, red onion, broccoli, summer squash, yellow pepper, and garlic. Add the veggies to the dutch oven and let them sauté for about 5-10 mins, until the veggies are cooked through. Add the dried thyme and lemon juice and let cook for about 2 more mins. In a large bowl, mix the pasta, sautéed veggies, and arugula and enjoy!
