VEGGIE QUINOA BOWL

Cook Time: 45 mins
Serves: 4 people

What You'll Need:

  • 2 cups uncooked quinoa

  • 1 cup spinach

  • 1 bunch of asparagus (or other veggie such as broccoli, cauliflower, sweet potato, zucchini)

  • 1 red onion

  • 1 red pepper

  • 4 garlic cloves

  • 3 tbsp olive oil

  • 1 avocado 

  • Salt and pepper

How It's Done:

Cook the quinoa on the stove, following the package directions. Set your oven to 425*. Chop all the veggies (leaving out the spinach) and put them on a large baking tray. Mix the veggies with olive oil, salt, and pepper. Roast the veggies for 20-30 mins or until they are cooked through and the edges have browned slightly. Mix in the spinach and cooked quinoa and top with avocado! Enjoy as a side or main dish!
